I don’t know about y’all, but summer has FLOWN by for me. Is it literally almost September!? I really do love summertime, but I am beyond ready for the humidity to be gone and for crisp, fall air to arrive 🌞

Here's a peak at what's got my attention this summer:
- Homemade Pickles -
What’s my favorite food? Pickles. Hands down. Pizza and pasta salad are a tie for second place. But if I had to choose, homemade pickles are the best. Using fresh cucumbers from her back porch garden and a homemade pickling brine, these pickles my friend Tori makes are MOUTH-WATERING. Tori is a wonderful cook and is known for throwing together home recipes that taste like you bought it from the store, if not better. And, homemade is cost-effective and environmentally friendly, both of which are big right now. Follow the recipe below to make your own!
Homemade Spicy 3-Day Pickles:
What you'll need -
- 6 medium sized cucumbers, cut into slices or spears
- Apple Cider Vinegar
- Whole peppercorns
- 2-3 whole cloves of garlic per jar
- Pepper flakes
- Sea Salt
- White Vinegar
- Jar or container
- 3 cups water
- 1.75 cups white vinegar
- 1 tablespoon sugar
- 1 tablespoon sea salt
This is a fairly easy recipe to customize depending on how acidic/spicy you like them. Add half a cup more water to the recipe and reduce the vinegar by a half cup if you like them less acidic.
Heat the base to a boil and make sure everything has dissolved. Stir and remove from heat, allowing it to cool completely. Cut cucumbers into spears or slices, depending on preference (I usually do a mix of both). Add to a mason jar, or old salsa/pasta sauce jar if you're in a pinch. Fill the jars with the cucumbers, followed by the base. Leave space in the jar for a healthy pour of apple cider vinegar. Add at least 2-3 garlic cloves to each jar. Before adding, crush them with the blade of a knife for easy skin removal and to help release the flavor. Add 2 pinches of peppercorns and several dashes of pepper flakes, more or less depending on how much heat you like. Seal and turn upside down several times to distribute the spices/garlic and to mix the vinegar. Immediately put them into the fridge for at least 3 days. You can test them after 24 hours to see if anything needs to be altered. By day 3 and beyond, you will have delicious spicy pickles to enjoy!
2. Mic Drop Workshop -
I’m a lover of speaking in front of crowds. I'm a lover of talking in general. The intimidating part has always been the idea of marketing myself and actually getting out there. Insert Mic Drop Workshop Mastery Course.
Jessica Ekstrom, founder and chief headband officer of Headbands of Hope, has always been a major girl crush and inspiration of mine. After interning with her the summer of 2013, I knew I wanted to do more with my passion and share my story. Jess designed a course for women who want to make an impact and connect with others through public speaking called, Mic Drop Workshop. The course helps dispel public speaking myths, provides tips and tricks to the world of public speaking, breaks down how to write your “talk”, create a website, and SO MUCH MORE. 3. Smudging -
If you pay any attention to the planets or cycles of the moon 🌙, you’ll know that we’ve been experiencing some cosmic shifts in the universe. I may not follow the astrological changes that closely or put full faith in what people say about it, but I can attest to the impact of a full moon (shout out to fellow social workers!). For me, smudging helps me clear my body and space of any negative energy and feel more at peace. Whenever there’s a full moon or sometimes just the start of a new week, I grab my bundle of sage and a lighter and walk through my apartment, paying special attention to doorways and dark corners. 4. Current read: Upside: The New Science of Post-Traumatic Growth by Jim Rendon -
I’m a self-identified nerd because I enjoy reading clinical and evidence-based books in addition to murder mysteries. This book was recommended by my therapist when I found myself struggling to explain how I feel I’ve redefined "me" and my life after the loss of my father. Upside looks at the positive side of trauma and the life-changing implications of post-traumatic growth. I can’t say it any better than the Amazon review: Upside shows how “suffering caused by traumatic events can be harnessed as a force for self-improvement and success rather than destruction”.
5. Favorite local restaurant: A Place At The Table -
A Place At The Table is Raleigh’s first and only “pay what you can” restaurant. If you’re in the area and haven’t stopped in, GO. RIGHT NOW. Open for breakfast and lunch everyday except Monday, APATT allows you to pay it forward by purchasing food tokens for others who may not be able to afford their meal, and any tip you leave goes directly towards menus items for customers in need. You can also choose to volunteer to pay for your meal! APATT thrives off the support of our community and I can say with first hand experience it’s a fun place to volunteer! Not only do I love their mission and vision, but the staff are SUPER friendly. And if you’re looking for a place to get some work done, I’ve written a blog or two while grabbing coffee or lunch. Be sure to ask for Julian when ordering your caffeine and say hey to Maggie, the Executive Director!
6. Be-fempowered 💃 -
Another one of my major girl crushes has FINALLY decided to grace the world with her fashion insight, all while empowering people to fully embrace themselves, inside and out. Jess’s truth and style will have you loving yourself and getting those shoes you've been eyeing. She’s been a huge influence on me and I personally can’t get enough of her. If you ever see me in a trendy outfit, it was probably put together or approved, by Jess.
